This ridiculously delicious Typica Mejorado had me swooning this summer in Ecuador. the processing of this coffee is the same as Fabricio’s Sidra CM. A fermentation of 4-5days in stainless steel tanks and dried on raised bed’s for a day before being transferred to a humidity and UV controlled room until 16% humidity is reached. Cherry is then transferred to grainpro bags for 10 days of enzymatic rest before being returned to the room to finish drying for 40 days.
Fabricio tastes: Dried plum, Intense citrus, and gummy bears with phosphoric acidity
We taste: Blood Orange, fuzzy peaches, riesling grape with phosphoric acidity.
