Produced and processed by Wilton Benitez at Grange Paraiso 92 in Piendamo, Cauca, Colombia.
In July 2024, I (Lynsey) was able to visit Wilton and get a first hand look at the innovative processing protocols that he is so well known for.  His commitment to pushing the boundaries of alternative processing in coffee is unwavering.
Experimentation with ultra-sound chamber technology, wild yeast replication and the now famous "thermal-shock" method are just a few of the innovations I was lucky enough to deep-dive into.
Cupping and brewing this coffee for Wilton at Paraiso 92 was an absolute joy! I hope it inspires a feeling of adventure in you, as it did for me!

PROCESSING:

Whole cherries are thermal-shock washed prior to pulping and fermentation.
Seeds and mucilage are then moved to an anaerobic bioreactor for fermentation along with a yeast-innolculation of Pichia kluyveri.
92 hours of total fermentation occur prior to drying and milling.
Pichia kluyveri is a very interesting wild yeast, collected and replicated at Paraiso 92 with the goal of enhancing intense stone fruit aromas, and adding elegance and freshness to the coffee
