Honey Cake - Washed Anaerobic Caturra, Colombia

Sweet and creamy with a citrus finish, this tasty caturra goes through 2 phases of anaerobic fermentation before washing.  The first, for 12 hours on cherry and the second, for 26 hours after pulping. We absolutely love what Eduardo Trejo did with this lot. We taste honey, dulche de leche, and lemon pudding.
