We are so honored to once again offer a coffee from Fabricio Coronel Pilco of Hacienda La Florida. This Sidra had our hearts the moment we tasted it this summer at the farm.
Processing begins with 4-5days fermentation in stainless steel until a ph of 3.75 is reached. Next, the coffee is transfered to raised beds for one day of sunbathing before being dried in dark rooms until humidity level of 16% is reached. The cherry is then put into grainpro bags for 10 days of enzymatic rest before being returned to the dark room to finish drying for 40 days. We taste: Pink grapefruit, rose, sprite soda, and dulce de leche
